Kim’s Favourite Veggie Soup 2 ways!
Serves 4 to 6
Ingredients:
5 potatoes
½ a butternut Pumpkin
1 small Sweet potato
1 Broccoli
1 carrot
1 Onion
3 cloves of Garlic
1 litre of chicken/vegetable stock. Follow the link for our very own Embrace Life stock recipe:
Pink Himalayan salt (to taste)
Sprinkle of Pepper
Sprinkle of Paprika
200mls coconut cream
Method:
- In a large pot cook all veggies until soft
- Remove from the heat and allow to cool for 5 minutes
- Add coconut milk – Simple!
Optional:
Enjoy as a chunky soup or once it cools down blend until smooth to make a delicious and nutritious pumpkin soup!
For extra protein, add chicken.
Also goes great with a slice of buttered crusty bread!
